Scaling a recipe is not simply multiplying all ingredients by a factor. Baking chemistry is particularly sensitive: leavening agents (baking soda, baking powder) do not scale linearly at large multiples — doubling a recipe may require only 1.75× the leavening to avoid an overly risen, metallic-tasting result. Salt is another non-linear ingredient: scaling a recipe 4× with 4× the salt produces an intolerably salty dish; experienced bakers use approximately 3× salt for a 4× recipe.
